In a kadhai,add some oil and heat it. Put some mustard seeds into it.
Add some urad dal, a pinch of asafetida, and curry leaves into the oil. Add some ginger, green chillies and onions to the mix and keep stirring. Finally, add some quinoa into the kadhai and give it a good mix.
Pour in some water and a pinch of salt. After a final gentle stir, cover it with a lid and let it cook for a while.
