What is Feta Cheese?

Feta Cheese whichis a Greek brined white cheeseproduced from sheep's milk or from a mixture of sheep and goat's milk.The name of this cheese, feta, which literally means “slice,” is considered to have originated in the 17th century in Greece.

Feta Cheese is soft, with small or no holes, a compact touch, a few cuts, and no skin. It has crumbly with a slightly grainy texture. It is made into huge blocks and aged in brine. Its flavour is tangy or salty, or both, ranging from mild to sharp.

Traditionally, feta is produced using only whole sheep's milk, or a blend of sheep's and goat's milk. When the pasteurized milk has cooled, rennet is added and the casein is left to coagulate. Then the compacted curds are chopped up and put in a special mould or a cloth bag which allows the whey to drain out.

In Bronze Age Cannan, cheese was perhaps among the salted foods shipped by sea in ceramic jars and so rennet-coagulated white cheeses similar to feta may have been shipped in brine.

To preserve Feta cheese in its best condition, it should be stored in the refrigerator. It is used as a topping as well as a filling. Sandwiches can be upgraded with a Feta cheese filling. Baked Feta with veggies, feta topping on salads or using Feta to make a cream base.
