When we are talking about comfort food, it doesn't get any simpler than Dal Khichdi. A one-pot rice dish, it can be prepared in less than 30 minutes. Served best with some curd or raita, pickle, and ghee on top.

arhar dal

Soak the rice and arhar dal in plenty of water. Drain and add both to a pressure cooker along with water, turmeric, salt and asafoetida. Cook the dal till 1 whistle comes. Once cooked turn the heat off.
In a heavy bottom large saucepan heat the ghee over medium flame. Add the cardamom pods, bay leaves and cumin seeds fry for a few seconds.
Now add onions. Fry for 3-4 minutes until it goes light brown. Stir well and add tomatoes, salt, green chillies, curry leaves, kashmiri red chilli powder, garam masala, ginger and garlic paste and fry over a low heat for 5 minutes.
