These kebabs are known for their buttery-soft texture thanks to the addition of raw papaya, which has a special enzyme that tenderises meat. It is interesting to know that the super-soft Galouti Kebabs or ‘Galawati Kebabs’ were invented by the Khansamas of Nawab Asad-ud-Daula, who had lost his teeth. So without further ado, let’s dive into the recipe of tender Galouti Kebabs.

  • mutton

    1/2 kilograms

  • lemon

  • oil

    1 cup

  • gram flour

    3 tablespoon

  • onion rings

    1 1/2 cup

  • chaat masala

    1/2 tablespoon

  • red chilli powder

    1 1/2 tablespoon

  • coriander leaves

    1 handful

  • mint leaves

    4 sprig

  • lemon wedges

    5 grams

  • black peppercorns

    1 teaspoon

  • cinnamon stick

    1/2 Numbers

  • cloves

    7 pieces

  • black cardamom

    2 pieces

  • green cardamom

    3 Numbers

  • mace

    1 teaspoon

  • green chillies

    2 teaspoon

  • nutmeg

    1/4 teaspoon

  • ginger

    1 tablespoon

  • garlic

    1 tablespoon

  • bay leaf

    1 Numbers

  • fried onion

    1 cup

  • papaya

    2 tablespoon

  • eggs

    1 Numbers

  • coriander leaves

    1/2 cup

  • salt

Grind peppercorns, cinnamon, cloves, red chilli powder, poppy seeds, black and green cardamom, mace, green chillies, nutmeg, ginger, salt, garlic, bay leaf, fried onions, raw papaya, poppy seeds, egg and coriander leaves. The consistency should be as thick as paste.

Add the prepared masala paste, 3 tablespoon roasted gram flour to the mutton keema. Mix all the ingredients well.

Make small balls of the prepared mixture and shape like tikkis. Refrigerate your tikkis for 10 minutes.
