Tawa Pulao- How to make Tawa Pulao

The aroma of fresh herbs and spices permeates through the layers of rice in pulao. With its origins in the Indian subcontinent, the recipe is flexible and open to modifications with different vegetables, nuts and meat options. The pulao with creamy plain yoghurt or raita makes a great combination. Modified to suit the taste of the masses pulao has entered the street foods category too.

Tawa Pulao, a classic Mumbai street food, is one such modification. The rice dish comprises vegetables and seasoned with pav bhaji masala. Paired with a simple boondi raita this recipe satisfies everyone’s palate. Here is the recipe:


Serves 2
  • oil2 tablespoon
  • butter1 teaspoon
  • cumin seeds1 teaspoon
  • garam masala1 teaspoon
  • pav bhaji masala1 teaspoon
  • red chilli powder1 teaspoon
  • yogurt2 cup
  • boondi1/2 cup
  • red chilli powder1 Pinch
  • black pepper powder As required
  • mint leaves powder1 Pinch
  • carrot As required
  • capsicum As required
  • onion As required
  • green peas As required
  • coriander leaves As required
  • sugar2 Pinches
  • salt2 Pinches


Step 1

In a kadhai or a deep-bottomed pan, add two tablespoons of oil and a tablespoon of butter. Add a tablespoon of cumin seeds and allow them to splutter.

Step 2

Add chopped carrots and cook for a minute. Add chopped capsicum, chopped onions, frozen/ boiled peas and cook for a minute each. Cook the veggies on high flame, stirring continuously.

Add cabbage and mix again. Lower the flame and add garam masala, pav bhaji masala, and red chilli powder and mix well.

Add ketchup and cook for a minute again. Add boiled rice, mix well and let it cook for a minute on slow flame. Add salt and freshly chopped coriander. Squeeze some lemon before serving and mix well.

For boondi raita, add 2 cups of yoghurt in a bowl. Whisk it well to make it smooth.
