Vegetable Spring Rolls recipe with steps: Spring rolls are a perfect starter idea for a party, and are easy to prepare. These rolls have a crispy and crunchy outside with a savoury veggie filling inside. It's a perfect Sunday cheat day meal. Serve with chilli, soy or your choice of hot sauce. They can also served with a bowl of hot soup or noodles. Remember that your roll sheet shouldn’t be thick in texture.

Take a pan with 1 tbsp oil in it and heat it over a high flame. Once the oil is hot, add in Ginger, & onion. Sauté it. Now add carrots, capsicum, cabbage, and stir fry till they become slightly tender but still have a crunch. Add in the salt, soya sauce, chilli sauce & pepper and give it a stir. Let the mixture dry up.
Remove the pan from the stove and transfer the filling mixture onto a plate. Let this mixture cool down. To make the flour paste for the roll, take a bowl and add maida, water, & salt and whisk well. Now, place the spring roll wrappers on a flat surface with uncooked side out and apply some flour paste to the corners. Place the filling mixture on the cooked side of the sheet, at one end. Fold 1/2 inch from the left side and then the right side. Roll upwards holding the sides.Seal the edges well with the flour paste so that it doesn't crack when the roll is deep fried.
Take a heavy-bottomed Kadai and pour enough oil to deep fry. Deep fry the spring rolls till golden brown. Turn off the heat and transfer the dish to a serving plate. Serve hot with ketchup/chilli sauce.
