Khasta kachori: Flakey and crunchy stuffed snack

Stuffed dough balls, khasta kachoris happen to be one of India's best love snacks. Right from shops to home kitchens, there is hardly any dearth of places doling out fresh kachoris, no matter what the season. Often said to have originated in Uttar Pradesh, kachoris are now found all over the country. They are delicious, crunchy & making them is an absolute delight!


Ingredients

Serves 3
  • all purpose flour

    1 cup

  • gram flour

    1 tablespoon

  • ghee

    2 tablespoon

  • salt

    As required

  • water

    As required

  • oil

    1 tablespoon

  • cumin seeds

    1 teaspoon

  • asafoetida powder

    1 Pinch

  • moong dal

    1/2 cup

  • red chilli powder

    1 teaspoon

  • garam masala

    1/2 teaspoon

  • turmeric powder

    1/2 teaspoon

  • coriander powder

    1/2 teaspoon

  • ginger

    1 tablespoon

  • oil

    As required

  • salt

    As required

Preparation

Step 1

Mix maida, gram flour and ghee in a bowl. Add some salt and a little water. Knead these ingredients into a firm dough. Make small balls of dough and keep aside.

Heat some oil in a frying pan over moderate flame. Add cumin seeds and asafoetida powder. Fry for 30 seconds, add moong dal and fry for a minute.

Now add the red chilli powder, chopped ginger, garam masala powder, turmeric powder, amchur, coriander powder and salt. Mix well and cook for 5 to 6 minutes.
