Chef Ritika Gupta's No Bake Mango Cheesecake is so simple you can make it with one hand tied. Try this rich cake with creamy cheese infused with the goodness of mangos set on a buttery cookie base. In the chef's own words, "It's creamy on top and crunchy at the bottom." You don't need an oven for this. Serve it with some fresh mango slices and mint leaves.
cream cheese
1 cup
digestive biscuit
200 grams
powdered sugar
2 tablespoon
mango puree
1 cup
whipping cream
1/4 cup
vanilla essence
4 drops
Powder 2 packets of digestive biscuits till they achieve a sand-like texture.
Add 1 tablespoon of melted butter to the powdered biscuit mixture. Mix till the mixture becomes pliable.
Take a ring mould and cover it with aluminium foil from the bottom and from the sides. Cut the excess foil from the sides.
