Diwali Special Motichoor Parfait – Fusion Dessert

Motichoor parfait is a stylish dessert made with a mix of tempting layers of Indian sweets that looks appealing to the eyes and comforting to your sweet-cravings.


Serves 2
  • milk1 litre
  • green cardamom1 teaspoon
  • sugar2 tablespoon
  • sugar2 tablespoon
  • water As required
  • almonds As required
  • pistachios As required


Step 1

Start by making the rabdi. Use a deep bottom pan and pour some milk into it. Add some cardamom powder into the milk. The milk needs to thicken and reduce to half its quantity.

Now add some sugar into it and keep stirring. After it has transformed into thick and consistent rabdi, place it in the refrigerator for at least an hour.

Get preparing the caramelized nuts. Add sugar into a pan. And add a little bit of water into it. Mix it and allow it to caramelize on low flame. Carefully stir to avoid burnt caramel.

Once it starts looking like molten lava add chopped nuts- almonds and some pistachios. Switch off the flame and slightly mix to coat the nuts with caramel.

Place a parchment paper o n a tray and grease it with some oil. Pour the caramelized nuts mixture over it evenly. Place it in the refrigerator to set.

Crumble some motichoor laddus and put it at the base of a glass. Press the motichoor crumble to the base by using a spoon and make a firm motichoor base. Now add the layer of cold rabdi over the motichoor.

In this way, layer the dessert till the cup/glass is full. Add some little bits of the caramel over it and your motichoor parfait is ready to be devoured.
