In a blender, add coconut, soaked cashews and poppy seeds, red chilli, cinnamon stick, cardamom and cloves. Grind them together to a fine paste.
Dice all the vegetables into equal pieces and add them to the cooker. Add water and a little salt. Pressure cook the vegetable for two whistles and allow the pressure to subside.
Heat a pan with oil and add the spices - cinnamon, cloves and bay leaf. Sauté for a minute until they get aromatic and then add the chopped onion. When the onion turns translucent, add the cooked vegetables. Stir for a while and add the prepared ground kurma masala.
