At just 38, Saini has made history. Although he’s not the only Indian chef who’s leading a restaurant at a global level, but truly the first one from India who gained three Michelin stars in the prestigious Michelin Guide 2025. This Indian born chef is currently heading a now 3 Michelin starred restaurant serving Indian food anywhere in the world. Chef Saini’s journey began in New Delhi at the renowned Indian Accent, under the mentorship of Manish Mehrotra. He absorbed the essence of modern Indian cuisine, building a foundation on the belief that flavour must always come first, which is later followed by innovation and presentation.

The chef played a major role in launching numerous concepts like Masala Library, Trèsind Mumbai and Farzi café before taking over at Trèsind Studio in Dubai completely. This 20-seater culinary destination is serving delights which is not only taste worthy but also award worthy.

What actually sets Trèsind studio apart is its menu that takes diners on a journey across India’s diverse regions, including the serene backwaters of Kerala to the dunes of the Thar Desert. Chef Himanshu Saini is considered among the youngest tastemakers in Indian cuisine today. The chef has always believed in the process of metamorphosis, and the same is reflected in his dishes. There’s no final dish or a signature dish in his opinion, and each dish is a result of evolution that it goes through over the years.
The chef has a vivid mindset when it comes to presenting the dish, he thinks that ‘You’re not always going to hit a bull's eye, but it is essential to start somewhere and let it go through its own metamorphosis until it transpires into its potential.”
In many interviews and Saini also reflected on how these awards and recognitions have served as an inspiration and responsibility. As an individual, he pushed himself to do better every day and challenge his creativity to impress his audience. He believes that when a person gets recognised for pushing their limits, there is a sense of responsibility to represent the cuisine on the global stage.
