In a special segment of the show, Kapoor shared his recipe with contestant Casper Kenworthy, who had just won the Mystery Box challenge. The dish not only highlights the versatility of khichdi but also showcases how traditional recipes can be elevated with modern culinary techniques. The preparation begins with marinating salmon fillets in a generous layer of tandoori spice, allowing them to absorb the flavors for 10 to 15 minutes while the khichdi is prepared.
To create the khichdi, half a red onion is diced and sautéed in ghee or oil over medium heat until it caramelizes, becoming soft and sweet. The khichdi mix is then added to the pan, followed by pumpkin purée and turmeric, which gives the dish a vibrant orange hue. A splash of coconut milk is incorporated to enhance the richness and balance the earthy flavors of the pumpkin and turmeric.
While the khichdi simmers, the marinated salmon is grilled in a separate pan over medium-high heat for about three to four minutes on each side. For serving, a generous portion of khichdi is placed at the base of a shallow bowl, topped with the grilled salmon. The dish is garnished with colorful carrot ribbons, asparagus spears, tomatoes, and sweet potato cubes, adding both visual appeal and a delightful crunch.
