Ingredients
1 cup rava
1 cup curd
½ cup semiya
½ cup water
2 tsp coriander leaves
1 tsp oil
Salt to taste
½ tsp baking soda
For the tempering
2 tsp oil
1 tsp mustard
½ tsp chana dal
½ tsp urad dal
½ tsp turmeric
Pinch of asafoetida
1 green chilli
1 inch of ginger
A few curry leaves
Other ingredients
1 tsp oil
15 cashews
Method
To prepare this delightful vermicelli idli at home, start by dry roasting rava on a low flame until aromatic. Furthermore, roast semiya with a tsp of oil until crisp and slightly golden brown.
Add curd into the roasted semiya and in the meantime, prepare the tempering by heating oil, urad dal, chana dal, mustard seeds and hing. Also add green chilli, curry leaves and ginger. Additionally, add turmeric and saute until it splutters.
Pour the tempering into the same bowl and also add coriander leaves and salt to the mixture. Mix everything well and add water as required. Allow the batter to rest for 20 minutes. Just before steaming, add a pinch of baking soda and mix well until frothy.
Next, pour the batter immediately into the idli plates and do not rest the batter. Now, steam the batter for about 8-10 minutes on medium flame. Finally, serve the idlis hot with coconut chutney and sambar and enjoy!
