Michelin-starred chef Vikas Khanna has reached a significant milestone at his New York City restaurant, Bungalow, marking 900 days of operation. To commemorate the occasion, the chef unveiled a special culinary tribute inspired by the legendary Indian composer AR Rahman, specifically referencing the iconic film score for the movie Roja.

The dessert, aptly named 'Roja', is a creative evolution of Khanna’s signature rose malai kulfi. The dish is visually striking, shaped like a rose using a custom-designed mould and finished in a vibrant shade of red. It is served in a handcrafted gold bowl, topped with rose syrup, and garnished with delicate rose bark, rose petals, and pistachios for added texture.

A Milestone for Indian Cuisine in New York

Reflecting on the restaurant's journey since its 2024 opening, Khanna noted the overwhelming demand the establishment has faced. He shared that the restaurant frequently sells out within seconds of opening reservations, with nightly waitlists sometimes exceeding 10,000 guests. Beyond the operational success, the chef expressed deep pride in the growing appreciation for Indian culture and cuisine within the Western culinary landscape.

The 'Roja' dessert serves as a personal bridge between Khanna’s culinary roots and his inspirations. The base of the dish draws from the traditional malai kulfi, a treat that holds personal significance for the chef, reminiscent of the kulfa once sold outside the Golden Temple in Amritsar. By presenting this refined version, Khanna aims to honor both his heritage and the artistic influence of AR Rahman, whom he describes as a maestro whose work has inspired generations.
