Goa’s Boilermaker Secures Spot on Prestigious 2026 Global Bar List
Siolim-based bar Boilermaker has earned the 57th spot on the extended 2026 Best Bars list, marking a significant milestone for Indian mixology by blending a casual, dive-bar aesthetic with a highly technical, ingredient-focused drinks programme.
The international cocktail community has turned its attention to North Goa following the announcement of the extended 2026 Best Bars list. Boilermaker, a venue located in the quiet neighbourhood of Siolim, has secured the 57th position on the global ranking. This achievement places the bar among the most notable beverage destinations across 34 cities worldwide, marking a significant milestone for the Indian hospitality industry.
The recognition highlights a shift in global appreciation for bars that prioritise craft over conventional luxury. Despite its relatively short time in operation, the establishment has gained international attention for its ability to compete with high-profile venues in major cities like London and New York, all while maintaining a relaxed, unpretentious atmosphere that welcomes guests directly from the beach.
The Vision Behind the Bar
Boilermaker is the result of a collaboration between two prominent figures in the Indian beverage scene: mixologist Pankaj Balachandran and craft beer pioneer Nakul Bhonsle. Balachandran, known for his work with the consultancy Distilled Concepts and previous projects like Bar Tesouro, brings a focus on spirit-forward cocktails. Bhonsle, the founder of Great State Aleworks, contributes his expertise in the craft beer movement. Together, they designed a space that bridges the gap between technical mixology and a casual, accessible environment.The bar’s design reflects this ethos, utilising raw wood, corrugated metal, and mismatched furniture to create an open-air setting. This aesthetic choice is intended to keep the focus on the drinks and the social experience rather than on formal decor. The name itself pays homage to the traditional bartender’s pairing of a beer and a shot, a concept introduced to Balachandran by bartender Stuart Hudson.
A Technical Approach to Local Flavours
The drinks programme at Boilermaker is noted for its technical precision, involving daily preparation and clarification methods that mirror those found in top-tier global bars. The menu features creative interpretations of the classic boilermaker, often incorporating indigenous Goan ingredients. Examples include a cashew sour made with local feni and cocktails featuring dukshiri, a traditional Goan spirit. This commitment to regional flavours is paired with a small-plates menu designed for sharing, featuring items like spicy chorizo peanuts and fried chicken.This global ranking follows a successful year for the venue, which reached the number 8 spot on the Asia’s 50 Best Bars list in July 2026, where it was also named the best bar in India. As the industry continues to evolve, Boilermaker’s success suggests a growing international interest in venues that combine local authenticity with high-level professional craft. The bar remains a focal point for both local patrons and international travellers visiting the region.
