As the year enters its final quarter, restaurants across India are refreshing their offerings to align with the changing season. From inventive cocktail programs that reimagine classic dishes to expansive menus blending global and regional influences, dining establishments in Delhi, Mumbai, and Bengaluru are introducing new concepts designed to surprise both regular patrons and new guests alike.
These launches reflect a broader trend of culinary experimentation, where chefs and mixologists are focusing on seasonal ingredients and creative storytelling. Innovative Cocktails and Global Flavours
In New Delhi, the bar Mr Button is marking its first anniversary with a unique cocktail collection titled Poured, Not Plated. Rather than simply replicating dishes, the menu uses techniques like fat washing, clarification, and infusion to capture the essence of global flavours. Highlights include the Tom Yum cocktail, which incorporates coconut-washed gin and Thai aromatics, and the Sushi-Tini, a drink inspired by a Shibuya sushi counter that uses nori and wasabi tinctures to evoke the umami profile of sushi. The collection also features a playful PB&J cocktail, drawing on the classic American pairing.In Bengaluru, several venues are focusing on global fusion. Shao, located at the Radisson Blu Bengaluru Outer Ring Road, has introduced an a la carte menu by Chef Sitam Lama that spans Chinese, Southeast Asian, and Balinese traditions. The menu ranges from vegetarian options like Crispy Spicy Tofu to bold mains such as Smoked Spicy Pork Belly with Bamboo Shoots. Meanwhile, The Scene in JP Nagar has expanded its offerings with global comfort food, including Korean BBQ Wings and various handcrafted pizzas, paired with a new cocktail programme that features ingredients like jackfruit and fresh sugarcane juice. Pangeo has also debuted a new menu at Forum Rex Walk, emphasizing a diverse mix of small plates, sourdough pizzas, and signature grills like Chicken Galouti Kebab and Herb-Crusted Grilled Fish.
