Heat butter in a wok and fry the rice for 2 minutes, add some soy sauce and spring onions now toss well. Remove from the heat and keep aside.
In a clay pot, sauté the onions, garlic, ginger, spring onions and chillies, next add the chicken and season.
Add all the veggies and cook for 2-4 minutes.
