Kuzhi Paniyaram: Crispy rice and urad balls

Kuzhi paniyaram or paniyaram is a South India speciality made of rice and urad dal. It is crispy on the outside, yet soft and fluffy on the inside. Served usually with a coconut chutney, kuzhi paniyaram is a delicious breakfast dish. Here's a quick recipe.


Ingredients

Serves 2
  • dosa batter

    1 cup

  • onion

    1 medium

  • ginger

    1 teaspoon

  • green chilli

    2 Numbers

  • coriander leaves

    1/4 cup

  • salt

    As required

  • mustard seeds

    1 teaspoon

  • urad dal

    1 tablespoon

  • asafoetida powder

    1/4 teaspoon

  • curry leaves

    6 Numbers

Preparation

Step 1

Heat oil in a small pan, add urad dal and rai to it and temper them. Then, add heeng, curry leaves and ginger to it and stutter it for some time. Add finely chopped onion to this mix and cook them until soft.

Add this tadka to the dosa batter with fresh coriander leaves.

Grease the holes of the paniyaram pan and pour the batter into them. Cover with a lid. After 10-15 seconds lift the lid and flip them around carefully. Keep the flame medium at all times.
