If strawberries are your favourite, then a strawberries mawa cake is for you. This cake is a simple yet complex one because of its flavour. Strawberries make it sweet and slightly tangy. However, one needs to factor in the sweetness and the water content of strawberries.

If you prepare an eggless strawberry mawa cake with fresh strawberry compote (fruit stewed or cooked in syrup to make a dessert), there is no need for artificial colour or flavour. The use of strawberries makes the cake unadulterated and pure. Here’s the recipe:


Ingredients

Serves 6
  • strawberries

    1 cup

  • sugar

    3 tablespoon

  • butter

    100 grams

  • powdered sugar

    3/4 cup

  • salt

    1 cup

  • all purpose flour

    1.5 cup

  • baking powder

    1 teaspoon

  • baking soda

    1/4 teaspoon

  • curd

    1/4 cup

  • milk

    3/4 cup

  • khoya

    As required

  • cardamom powder

    As required

  • butter

    As required

Preparation

Step 1

In a pan, add the chopped strawberries and sugar. Cook them on low flame till the strawberries are mushy, and you prepare a compote. Turn the heat off and let the mixture cool down.

In a mixing bowl, add butter and powdered sugar. With an electric beater, beat well until it turns light and fluffy.

In a pressure cooker, add salt and spread it evenly. Place a small perforated vessel over the salt. Remove the gasket and whistle from the pressure cooker for convection cooking. Put the lid on and let it heat.
