Kaala mutton is a flavourful preparation that gets its distinct flavour and dark colour from charred onion and coconut base. Serve this aromatic dish with steamed white rice, bhakri or roti.

Put chillies, garlic, ginger, and coriander leaves in a grinder without adding any water. Grind this into a coarse masala.
In a bowl, mix mutton pieces with the freshly ground masala, dahi, turmeric and salt. Let it marinate for two hours.
Heat oil in a pressure cooker and fry the marinated mutton for 3-4 minutes.
