Lauki ke kofte is an Indian style curry, very light in texture served with deep fried bottle ground balls dipped in the curry(10 mins before serving). Lauki ke kofte is a great idea for lunch, can be served with roti and steamed rice. The curry is usually tomato based, mixed with very mild spices. It takes less than 30 mins to cook.

Peel and grate lauki. Squeeze out the water completely.
Heat oil in a frying pan over medium flame for deep frying. When oil is medium hot, add 3-4 balls at a time. Stir occasionally and deep-fry until they turn light golden brown and crisp.
Heat oil in a pan over medium flame. Add cumin seeds and cook until they sizzle, 7-10 seconds. Add chopped green chillies & ginger-garlic paste and stir-fry for 30-40 seconds.
