Marinate the chicken in Thai green paste, ginger garlic paste and lemon juice for 20 minutes. Be careful with salt if the Thai curry paste is well seasoned. Use salt in a balanced manner.
After the chicken has rested, fry it in a hot cast iron pan or non-stick with some oil. Fry each side for five minutes until it turns golden brown. Cook until a crust starts to form.
For the dipping sauce, mix all the ingredients well. Make sure all the sugar dissolves.
