How to Simplify German Chocolate Cake with an Easy Sheet Pan Method

German chocolate cake is a perennial favourite, celebrated for its combination of deep, cocoa-rich sponge and a decadent, caramel-like frosting packed with coconut and toasted pecans. While the traditional tiered version is often viewed as an ambitious baking project, the sheet cake format offers a much more accessible alternative. By baking in a single pan, home cooks can achieve the same iconic flavour profile without the stress of stacking or complex assembly, making it an ideal choice for feeding a crowd.

To prepare this dessert, you will need standard pantry staples. The cake batter relies on a blend of flour, sugar, cocoa powder, baking soda, baking powder, and salt, combined with buttermilk, oil or melted butter, eggs, and vanilla. A key tip for deepening the chocolate profile is to incorporate a half-cup of hot water or coffee into the batter. For the signature topping, the process involves a mixture of evaporated milk, sugar, butter, and egg yolks, finished with desiccated coconut and chopped pecans—though walnuts serve as a suitable substitute if pecans are unavailable.

Mastering the Bake and Signature Frosting

Begin by preheating your oven to 175 degrees Celsius and preparing a 9 by 13-inch baking pan. After whisking your dry ingredients, combine them with the wet mixture until just incorporated. Once the batter is poured into the pan, bake for 30 to 35 minutes. It is essential to avoid opening the oven door during the first 20 minutes of baking to prevent the cake from sinking due to temperature fluctuations. Once a toothpick inserted into the centre comes out clean, allow the cake to cool in the pan for approximately 15 minutes.

While the cake cools, prepare the frosting by heating the evaporated milk, sugar, butter, and beaten egg yolks over medium-low heat. Constant stirring for 10 to 12 minutes is required to thicken the mixture into a golden consistency without scrambling the eggs. Once thickened, remove from the heat and fold in the vanilla, coconut, and toasted pecans. Spread this mixture over the warm cake and allow it to set for at least an hour. While the cake is ready to serve once set, many find the flavours improve after resting overnight. Due to the dairy and egg content, any leftovers should be stored in an airtight container in the refrigerator for up to four days.
