Chicken croquette is a small roll made out of bread crumbed containing minced chicken. It has gained popularity as a fast food all over the world. The ingredients are mixed together, then coated with breadcrumbs and deep fried to create a golden, crunchy outer shell.


Ingredients

Serves 4
  • potato1 cup
  • chicken1 cup
  • bread crumbs1 cup
  • onion1/2 cup
  • ginger garlic paste1 tablespoon
  • cumin powder1 teaspoon
  • red chilli powder1 teaspoon
  • dry mango powder1 teaspoon
  • turmeric powder1 teaspoon
  • garam masala1 teaspoon
  • cumin seeds1 teaspoon
  • green chilli1 teaspoon
  • salt As required
  • coriander leaves1 tablespoon
  • cornflour1 tablespoon
  • oil As required

Preparation

Step 1

Boil and peel the potatoes.

Add onions, ginger-garlic paste, turmeric powder, red chilli powder, amchur, cumin powder, garam masala powder, cumin seeds, chopped green chillies, Salt & coriander.

Take cornstarch, lightly beaten egg and breadcrumbs in different shallow bowls. Keep on hand a lightly greased large plate to keep the formed croquettes.

Form small rolls of the filing with your hands. Dust lightly with cornstarch, tapping of excess.

Then dip lightly into the beaten egg, shake off excess and roll in the breadcrumbs to cover it on all sides. Place on the plate. Allow the coating to firm up slightly before frying them. You can refrigerate them for a while.

Heat oil in a kadhai. When the oil is hot, drop in 2-3 patties, reduce heat to medium-high and fry till golden brown on all sides.

Remove on to a paper towel lined plate to drain excess oil. Serve them hot along with some ketchup.
