Sesame seeds are full of healthful nutrients that make it a perfect food for the cold winters. In India, these nutritious seeds find their way into many preparations. One such delicacy is Til Gajak, which is made during the auspicious Makar Sankranti.
Til Gajak is made from white sesame. It is a confectionary item from North India and is crispy and delicious. The peculiar nutty taste of sesame complements the sugariness of the gajak. Prepared in no time, these are liked by all and healthy too. You can also switch sugar with jaggery to make it healthier.
In a pan, dry roast the sesame seeds on low-medium flame till they become light golden brown.
See VideoSpread them out on the plate once roasted well. Now in the same pan, add some sugar. Allow it to caramelise on a low medium flame.
See VideoWhen the sugar has reached a good golden brown colour, add the sesame seeds to it and ghee. Add some cashew nuts and mix well. Add some cardamom powder.
