  • eggplant1 large
  • oil As required
  • water As required
  • ginger1 tablespoon
  • garlic1 tablespoon
  • green chilles1
  • onion1 cup
  • tomato1 cup
  • salt As required
  • turmeric powder2 teaspoon
  • coriander powder2 teaspoon
  • coriander leaves As required

Preparation

Step 1

Make 6 small slits in the baingan and brush it with some oil. Roast on an open flame for 8-10 minutes, keep turning the baingan every 1-2 minutes to make sure its roasted well on all sides.

You can prick it with a fork or knife to check if its cooked from inside. If not, roast for a few more minutes.

Once the baingan is roasted, dip it in cold water and set aside to cool for a few minutes.

Heat oil in a pan. Add garlic, ginger, chopped chillies and onions. Stir fry till the onions are soft and add tomatoes, salt, chilli powder, coriander powder, turmeric and salt. Mix well, and cover and cook till the tomatoes are soft and pulpy.
