Bread Medu Vada - Instant Medu Vada Recipe

Vada is a donut shaped South Indian dish which is crispy crunchy from outside and soft from inside and this version of the Medu Vada is made out of bread of your choice. With just a few bread slices and some easily available ingredients Medu Vada can be your ideal breakfast. It tastes more delicious when combined with coconut or any chutney of your choice. Since medu vadas do not absorb a lot of oil they are light and wholesome.


Ingredients

Serves 4
  • white bread4 slices
  • semolina1/2 cup
  • rice flour1 cup
  • curd1 cup
  • onion1/2 cup
  • ginger1 tablespoon
  • cumin seeds1 teaspoon
  • green chilli1 teaspoon
  • coriander leaves1 teaspoon
  • curry leaves12 Numbers
  • salt As required
  • oil As required
  • coconut1/2 cup
  • green chilli3 Numbers
  • coriander leaves1 bunch
  • mustard seeds1 tablespoon
  • cumin seeds1 teaspoon
  • urad dal1 teaspoon
  • dry red chilli3 Numbers

Preparation

Step 1

In a large mixing bowl take 4 slices of white bread.

Add rice flour, semolina, & curd. Mix it together.

Add cumin seeds, onion, ginger, curry leaves, coriander, green chillies, and salt.

Mix all the ingredients and form a soft dough. If you feel the dough is dry, you can add 1 to 2 tsp of curd to make it smooth dough.

Now make a small ball and gently press to flatten. then slowly create a hole in the centre like you prepare in vada.

Heat oil in a kadhai for frying. Deep fry the vadas slowly on medium flame.

Fry on both sides till they turn golden brown. Drain on tissue paper to remove excess oil.

To make Chutney, in a blender take grated coconut, green chillies, coriander, & salt. Blend to smooth paste adding water as required.

Now prepare the tempering for chutney by heating oil in tadka pan. Add in mustard seeds, cumin seeds, urad dal, red chilli and few curry leaves. Allow to splutter.
