Chicken Pot Rice: Restaurant-style recipe

A self-content recipe that doesn't need anything on the side. A delicious chicken pot rice for the weekend. One-pot meal for the lazy weekends. Let the celebration begin!

  • butter1 tablespoon
  • basmati rice4 cup
  • soy sauce1 1/2 teaspoon
  • spring onions1 tablespoon
  • oil2 tablespoon
  • ginger1 tablespoon
  • garlic1 tablespoon
  • onion1/2 small
  • green chillies1 tablespoon
  • chicken259 grams
  • zucchini1/2 cup
  • broccoli1/2 cup
  • red bell pepper25 grams
  • yellow bell pepper25 grams
  • green bell peppers25 grams
  • mushroom1/2 cup
  • carrot1/2 cup
  • french beans1/2 cup
  • salt As required
  • soy sauce2 tablespoon
  • black pepper powder As required
  • baby corn1/2 cup
  • spring onion whites2 tablespoon
  • zucchini yellow1/2 cup
  • chicken stock2 1/2 cup

Preparation

Step 1

Heat butter in a wok and fry the rice for 2 minutes, add some soy sauce and spring onions now toss well. Remove from the heat and keep aside.

In a clay pot, sauté the onions, garlic, ginger, spring onions and chillies, next add the chicken and season.

Add all the veggies and cook for 2-4 minutes.

Add the stock and bring to a boil, finish with soy sauce and cornflour slurry.

Next, remove half the sauce and the veggies. Add half the rice, top with the removed gravy then add rice again.

Cover with foil paper and let it steam for 5 minutes then serve.

Garnish with spring onions.
