Christmas cake: Boozy red wine and fruit-infused goodness

The cake season is finally here. Oh yes, it’s Christmas time. And, we all love to have a slice of cake with a cuppa. Well, who doesn’t? A tradition that started off as porridge, the classic Christmas cake came into being when people started adding dried fruits, spices, eggs, flour, and honey to it. From plum to rum, the options are many.

Christmas celebrations are not complete without the traditional red wine-infused bunt cake. Greet your family this festive season by giving them a bit of this delicious bundt cake that is filled with oodles of goodies.


Ingredients

Serves 6
  • refined flour1 1/2 cup
  • red wine2 1/2 cup
  • baking powder1 teaspoon
  • fruit peels1/2 cup
  • cashews2 teaspoon
  • almonds2 teaspoon
  • pistachios2 teaspoon
  • vanilla essence1 teaspoon
  • eggs3 Numbers
  • cherries1/4 cup
  • black currants1/4 cup
  • sugar1 cup
  • butter1 cup
  • mixed spice powder2 teaspoon

Preparation

Step 1

Chop up the glazed cherries, black currant and fruit peels. Mix them together.

Add two cups of red wine and let them soak for a day.

In a bowl, add 1 cup butter and whisk it till it becomes smooth.

Once done add powdered sugar and whisk it in well. To it add three eggs and give it another whisk. Once done, add one teaspoon vanilla essence and two teaspoons of mixed spice powder.

Now pour half a cup of maida and one teaspoon of baking powder into it and beat it well. Then, throw in the wine-soaked cherries and fruit peels to the mixture as well as half a cup of mixed nuts. Add 1/2 cup red wine to it and give it a good fold using a spatula.

Transfer the cake batter to a greased bundt cake pan and bake for 180 degrees Celsius for 35 minutes.

Do the toothpick test to make sure it is completely done. Serve when cool.
