How to make Homemade Kathi Rolls

Ever wondered why Kathi rolls are a popular lunch option among office goers. The answer is simple. They are easy to eat and easy to pack. They are an apt fit for meetings done over a meal. It is for those who want small meals on the go. But that shouldn’t stop us from preparing Kathi rolls at home. The homemade version would be fresh, healthier and rich in taste. The key is the filling that you prepare for the rolls.


Ingredients

  • curd2 tablespoon
  • ginger garlic paste1 tablespoon
  • black pepper powder1/2 teaspoon
  • turmeric powder1/4 teaspoon
  • kashmiri mirch powder1/4 teaspoon
  • coriander powder1 teaspoon
  • cumin powder1 teaspoon
  • garam masala1 teaspoon
  • salt As required
  • boneless chicken400 grams
  • lemon juice1 Numbers
  • oil1 teaspoon
  • paneer250 grams
  • coriander leaves As required
  • mint leaves As required

Preparation

Step 1

Add curd in a bowl. Now add some ginger garlic paste. Mix black pepper powder, turmeric, red chili powder, coriander powder, cumin powder, garam masala, and salt. Now add chicken pieces to it. Let it sit for 5 to 10 mins.

In a pan, add two tablespoons of vegetable oil and let it heat. Add sliced onion and saute for a few minutes. Add a diced tomato and cook well. Add the marinated chicken pieces to the pan. Cover and cook until the chicken is well cooked.

Marinate paneer. In a bowl, put ginger garlic paste, lemon juice, oil. Mix spices with it like red chili powder, turmeric, coriander powder, cumin powder, garam masala, salt and pepper. Then add paneer cubes to the mixture and put coriander and mint leaves to it. Now mix the entire thing.

In a separate pan, add a tablespoon of vegetable oil and cook the marinated paneer. Take it off the heat while the paneer is still spring and juicy. Let both the fillings cool.

Take leftover chapatis, spread some green chutney, add sliced onion rings, capsicum, chopped green chillies and your choice of filling - chicken or paneer.

Sprinkle some chaat masala and roll carefully.

Serve hot after covering them almost half of the length with aluminium foil or butter paper. A small bowl of your favourite coriander or mint chutney would go well with the serving.
