Crunchy pakoras or fritters complement the spirit of monsoons. Paired with a cup of chai or coffee, these are make up your day. They are one of the easiest snacks that Indians have known. And, when there is a healthy and hassle-free twist to it, you definitely wouldn’t want to give it a miss. Usually, people cut onions, veggies to make pakoras.

But you can also use leftover food items from the previous night. And for making these special pakoras one does not even require prep up before actual cooking. Pull out whatever dishes are left from the night before. Whether dal or sabzis, toss them together in a bowl, mix them up to cook a batch of a sumptuous meal. It is as simple to make as it sounds! Ingredients

Serves 2
  • rice1 cup
  • chana dal1/2 cup
  • cauliflower1/2 cup
  • red pumpkin1/4 cup
  • chana dal1/4 cup
  • onion1 Numbers
  • green chilli2 Numbers
  • ginger5 grams
  • cornflour1/2 cup
  • all purpose flour1/2 cup
  • salt As required
  • black pepper As required
  • eggs1 Numbers

Preparation

Step 1

In a bowl, mix rice, dal or sabzi and raw vegetables. Add the leftover items, one by one.

Add a whipped egg, cornflor and flour to this mixture. Then put salt and pepper. Mix again until the contents look cohesive and consistent.

Take small portions of the mixture to prepare spherical forms. Heat the oil to a medium to high temperature and fry the pakoras until they turn golden brown and crispy. Enjoy with chai, chutney or mayonnaise.
