And they have become a staple for dairy food lovers. Moreover, celebrations are incomplete without sweets! Mishti Doi is one such option that readily available and healthy too. And, festivities like Durga Puja, Bohag, Bihu etc. remain incomplete without Mishti Doi.
The classic delectable sweet yoghurt preparation uses caramelised sugar or jaggery, milk and curd culture. The milk is thickened and reduced first and then caramelized sugar is added. Sounds heavenly! Isn’t it? Let us see how you can make Mishti Doi at home.
Heat an aluminium kadhai or non-stick pan and add sugar. Let the sugar melt and caramelize completely.
See VideoWhen it has attained a good caramel colour, slowly add milk to it and mix till the lumps disappear. Allow this sweetened mixture to cool down.
See VideoIn a bowl, add the hung curd and whip until creamy. Check if the milk has turned lukewarm and add to the curd, little at a time. Add milk powder and mix well. Pour the entire mixture into an earthen pot.
See VideoHeat an aluminium vessel and place a towel in it. Gently place the earthen pot at the centre of the towel. Cover the vessel with aluminium foil and wrap the towel around it. Make sure to turn the flame low. Then cook for 20 minutes.
