Kaala mutton: Maharashtrian style black mutton curry

Kaala mutton is a flavourful preparation that gets its distinct flavour and dark colour from charred onion and coconut base. Serve this aromatic dish with steamed white rice, bhakri or roti.


Ingredients

  • mutton500 grams
  • green chilles4 piece
  • garlic12 cloves
  • ginger1 small
  • coriander leaves1 cup
  • curd1/2 cup
  • salt As required
  • onion3 medium
  • coconut1 grams
  • oil2 tablespoon
  • water4 cup
  • ghee2 tablespoon
  • red chilli powder1 tablespoon
  • garam masala1 tablespoon
  • lemon juice1/2 medium
  • coriander leaves1/4 cup
  • garlic powder1/2 teaspoon
  • onion powder1/2 teaspoon

Preparation

Step 1

Put chillies, garlic, ginger, and coriander leaves in a grinder without adding any water. Grind this into a coarse masala.

In a bowl, mix mutton pieces with the freshly ground masala, dahi, turmeric and salt. Let it marinate for two hours.

Heat oil in a pressure cooker and fry the marinated mutton for 3-4 minutes.

Add some water and pressure cook for 4-5 whistles. Remove from heat and keep aside.

Crush whole onions with your palms and char them on an open flame using a blow torch till they blacken. Repeat the process with the dried coconut.

Once cooled, transfer into a mixer and grind to make a chutney. Add ¼ cup water if required.

Heat some ghee in a vessel and fry the onion and coconut masala for 2 minutes. Add chilli, onion-garlic masala and garam masala. Cook for 2 minutes.

Add the mutton pieces along with the stock. Cover and cook for 10-12 minutes till the oil starts to separate.

Add lemon juice, garnish with coriander and serve hot!
