World Idli Day: How to make Podi idli

If you are bored of eating regular idlis, you should try this flavourful upgrade -- Podi idli. A specialty of South India, podi idli translates to "powder idli," referring to the podi masala that coats these fluffy idlis. These bite-size snack is a lip-smacking way to begin your day. Here is a simple recipe.


Ingredients

Serves 3
  • rice1 cup
  • urad dal1/2 cup
  • poha1/2 cup
  • salt As required
  • baking soda1/4 teaspoon
  • lemon juice1 teaspoon
  • water As required
  • curry leaves1/4 cup
  • dry red chilli7 Numbers
  • sesame seeds1 tablespoon
  • chana dal1/2 cup
  • urad dal1/2 cup
  • ghee1 tablespoon

Preparation

Step 1

For mini idlis, soak rice, urad dal and poha for 3-4 hours in water.

Cover the mix and rest it for 8-10 hours.

Add salt, baking soda and lemon juice. Mix well. Add water as per requirement.

Grease an idli pan with ghee and fill the slots with the batter. Cook for 10 minutes in an idli maker.

To make podi powder, heat ghee in a pan and roast chana dal and urad dal.

Add sesame seeds, curry leaves and dry red chillies. Roast for 2-3 minutes.

Let the mix cool down. Add to a mixer grinder and grind until a powder is formed. Adjust for salt.

To make podi idlis, heat some ghee in a pan and add the prepared podi masala. Sauté it and add the mini idlis.
